When you want to stuff vegetables in recipes such as cabbage rolls, stuffed peppers, dolmades, or zucchini with egg-lemon sauce, this is the rice that will make you successful, as long as you handle it correctly.
To prevent it from becoming sticky, rinse it well in a colander under running water to remove all the surface starch. Then squeeze a lemon over the rinsed rice and mix it well. This way, the rice will remain fluffy. It absorbs fats and is ideal for pilaf that will not be strained like cabbage rice, lentil rice, spinach rice, wedding pilaf, or yuvarlakia. It is not recommended for risotto because its grain is not very resistant to stirring and breaks quickly. It should be served immediately after cooking to prevent it from becoming sticky.
