It binds very well in recipes, either on its own or with other flours (such as bran or whole wheat), or even oat bran/wheat bran.
It has a nice taste (reminiscent of wheat), it doesn't clump, and it doesn't have carbohydrates or fats, so it is a very good solution for recipes on a diet. It doesn't rise much on its own, it requires baking or mixing with other ingredients; still, I recommend it. Both as a flavor and as a dietary product.
I will definitely buy it again!
