Erythritol is a type of carbohydrate called sugar alcohol, which are water-soluble compounds found naturally in many fruits and vegetables. It is also produced commercially by fermentation from a simple sugar derived from corn called dextrose. It is used as a zero calorie sweetener to help replace calories from sugar-containing carbohydrates in packaged foods and beverages.

Is erythritol naturally occurring?
Yes, erythritol is found naturally in fruits such as grapes, peaches, pears, and watermelon. It is also found in mushrooms and fermented foods such as beer, cheese, sake, soy sauce, and wine. Erythritol is commercially used in the production of baked goods, soft drinks, sweets, chewing gum, chocolates.

What are the health benefits of consuming erythritol?
Like most sugar alcohols, erythritol is not as sweet as sugar: it is only about 60-80 percent sweet. The lack of calories makes erythritol unique among sugar alcohols, most of which are around two calories per gram (compared with about four calories per gram). The health benefits of erythritol extend beyond replacing the carbohydrate-sugar calories in our diet. I don't have much experience with erythritol, but this specific product doesn't sweeten no matter how much I add. In theory, it has 70% of the sweetness of sugar, but in practice it's more like 5-15%.

    A decent erythritol. It's just not 1.1 and needs a little more. It has a good price and I use it in cakes, for example, where it melts. For recipes where it doesn't melt, I use powdered sugar. (I can't taste a difference between the two). I tried to make powdered sugar with the crystallized ones, but all I managed to do was burn 2 molds.
