Santoku Knife

The Santoku knife is a general-purpose knife, where in Japanese it means "three virtues", as it can be used to finely chop meat, fish, and vegetables. The tip of the knife is more curved than that of a chef's knife, while the small length of its blade makes it ideal for finely chopping your food.

Blade Material

The blade is made of AUS-8 steel with a medium carbon content, high chromium content. It offers exceptional balance of properties between blade hardness, sharpness and corrosion resistance. This balance provides great durability and is the favorite metal alloy for many quality knife enthusiasts.

Its hardness level is 59 HRC (a knife with a hardness above 56 HRC is considered good).

Handle

The handle is made of rose wood, a hard and durable wood that has an impressive appearance and harmonizes well with the metal of the blade.

Cutting Surface

It is recommended to make cuts on wooden or plastic cutting surfaces. Glass, stone, and marble cutting surfaces are unsuitable as they can cause permanent damage to the knife blades.

Cleaning

Wash the knife with warm water before using it for the first time. After each use, make sure to wash the knife immediately (with a mild detergent) and dry it with a soft cloth. Especially if you have cut acidic foods, you should wash the knife immediately after use.

For your own safety, you should always wipe the knife away from your body and away from its edge, using a cloth or towel.

It is not recommended to wash it in the dishwasher, but by hand, in order to protect its material and maintain its sharpness for a long time.

Sharpening

No matter how sharp a knife is at first, after some use it needs sharpening, something that you can achieve with a sharpener, sharpening stone, or strop.

You can tell if your knife cuts well with an easy test using the knife and a sheet of paper. A sharp knife can easily and cleanly cut through a sheet of paper. On the other hand, a knife that needs sharpening will struggle and its cutting will be rough.

It is also advisable to sharpen your knives with a professional occasionally, to fix any damage to the blade's edge and to maintain sharpness.

    The Okinawa series by Samura may be the only one that has followed the Japanese tradition in the shape of the knives in this company, which visually caught my attention immediately. Also, the steel is Japanese, but the company and their production have no relation to Japan. The Gyuto is ergonomic and in a size that makes it even more versatile and all-around, and it is sharp. Its packaging is not as luxurious as the rest of the Okinawa series that I have purchased.
