The Santoku knife is a general-purpose knife and in Japanese it means "three virtues", as it can be used to finely chop meat, fish, and vegetables. Its tip is more curved than that of a chef's knife, while the length of its blade is ideal for fine chopping. Its lightweight makes it comfortable for frequent use, while the indentations prevent food (especially fatty ones) from sticking to its blade.
