Chef Knife

The chef knife is the favorite knife of every professional and amateur cook, and not without reason. It has perhaps the most uses of any other kitchen knife, as you can use it to cut large portions, finely chop or dice vegetables and fruits, as well as meat and fish. Its wide blade and curved edge make it ideal for quick chopping through the well-known rocking motion. The thickness of the blade at the spine is enough to give you the weight and power you need, while its length covers a wide range of everyday tasks.

Blade Material

The blade is made from a single piece of surgical steel that contains chromium-molybdenum-vanadium (X50 Cr MoV 15).

X50 Cr MoV 15 is a widely used steel that is used in many kitchen knives and its composition includes approximately 0.5% carbon (X50), which provides hardness to the edge of the knife, and approximately 15% chromium (Cr), which provides resistance to corrosion.

In addition, it contains a small percentage of molybdenum (Mo) and vanadium (V), which offer improved wear resistance and maintain the sharpness of the knife.

The Wusthof knife is designed to provide reliable cutting performance and long-lasting durability.

The hardness level of the blade is 58 (±1) HRC (a knife with a hardness above 56 HRC is considered good).

Handle

The handle is ergonomically designed and is made from a material called Polyacetal Copolymer F20-03 BKF, also known as POM (Polyoxymethylene). POM is a type of plastic widely used for making knife handles and is known for its durability, friction resistance, and corrosion resistance. The three rivets on the handle of the knife contribute to increased stability and control during use.

Cutting Surface

It is recommended to make cuts on wooden or plastic cutting surfaces. Glass, stone, and marble cutting surfaces are unsuitable as they can cause permanent damage to the knife blades.

Cleaning

Wash the knife with warm water before using it for the first time. After each use, make sure to wash the knife immediately (with a mild detergent) and dry it with a soft cloth. Especially if you have cut acidic foods, you should wash the knife immediately after use.

For your own safety, you should always wipe the knife away from your body and away from its edge, using a cloth or towel.

It is not recommended to wash it in the dishwasher but by hand, in order to protect its material and maintain its sharpness for a long time.

Sharpening

No matter how sharp a knife is in the beginning, after some use it needs sharpening, something that you can achieve with a sharpener, sharpening stone or strop.

You can tell if your knife cuts well with an easy test using the knife and a sheet of paper. A sharp knife can easily and cleanly cut through a sheet of paper. On the other hand, a knife that needs sharpening will struggle and its cutting will be dull.

It is also advisable to sharpen your knives with a professional occasionally, to fix any possible damage to the blade's edge and to maintain sharpness.

    Awesome knife.
    It may be heavy, but sometimes the weight becomes an advantage.
    The handle is indeed a bit larger than it should be, but it doesn't bother me.
    It is also the sharpest knife I have, along with another Classic Ikon that I bought as a set.

    As for the blade, it is perfect, but quite heavy for a 20cm chef's knife, especially at the back of the handle. I gave it away and got the same one from the classic series, which suited me exactly as I wanted in terms of grip and weight.
