General-purpose knife

It is a knife that can perform many tasks in the kitchen. With this versatile knife, you can do all these small cutting tasks, such as chopping onions, cutting herbs, and cleaning and cutting your vegetables. The slightly longer blade is convenient when you don't need the height of a chef's knife, while a paring knife is too small to be comfortable.

Deba Knife

The Deba is used in Japanese cuisine as a traditional cleaver. The sturdy, heavy knife has a strong, wide single-edged blade. The front part of the blade is mainly used for filleting fish. The back part is stronger and is used, among other things, for breaking small chicken or fish bones.

Nakiri Knife

The nakiri knife features a wide and straight blade, with a blunt tip. It is mainly used for cutting vegetables and thanks to its thin blade, it can even cut the most delicate vegetable. However, it is not suitable for harder materials, such as small fish or meat bones, or frozen foods as it may break.

Santoku Knife

The wide Santoku knife is the traditional Japanese knife shape for general use, equivalent to a chef's knife. It is a versatile knife as you can use it to cut fish, meat, and vegetables.

Yanagiba Knife

The Yanagiba is a traditional Japanese filleting knife. Thanks to its thin, single-edged, and long blade, it is ideal for precise cuts. The knife ensures an intricate and exceptionally refined, smooth cut. Such cuts are particularly important in sushi preparation. The length and shape of the blade allow for a wide range of motion during cutting.

Blade Material

The polished blades of the Wasabi Black series are made from the new technology, rust-resistant 6A/1K6 steel and are particularly resistant to rust due to their high chromium content. They are a classic type of stainless steel. The high carbon content provides better edge retention.

Handle

The black plastic handle is water-resistant and therefore very sturdy. Its shape provides a pleasant, natural feel thanks to the addition of bamboo powder.

Cutting Surface

It is recommended to make cuts on wooden or plastic cutting surfaces. Glass, stone, and marble cutting surfaces are unsuitable as they can cause permanent damage to the knife blades.

Cleaning

Wash the knife with warm water before using it for the first time. After each use, make sure to wash the knife immediately (with a mild detergent) and dry it with a soft cloth. Especially if you have cut acidic foods, you should wash the knife immediately after use.

For your own safety, you should always wipe the knife away from your body and away from its edge, using a cloth or towel.

It is not recommended to wash it in the dishwasher but by hand, in order to protect its material and maintain its sharpness for a long time.
