Santoku Knife

The Santoku knife is the all-purpose knife that in Japanese means "three virtues", as it can be used for meat, fish, and vegetables. Its tip is more curved than the chef's knife, while the length of its blade is ideal for fine chopping even on the countertop of the household kitchen, where space is usually more limited. Its lightweight makes it comfortable and fatigue-free even after hours of use.

Blade Material

The blade of the knife is forged from a single piece of high carbon stainless steel. This sturdy steel resists stains and corrosion, guarantees longevity, and ensures precise cutting.

The hardness level of the blade is 58 (±1) HRC (a knife with a hardness above 56 HRC is considered good).

Handle

The handle is made of solid smoked oak, making it resistant to water and giving it an unyielding character.

It bears the Wüsthof logo and is secured with three brass rivets. The hand guard at the end of the handle is shaped to ensure that the knife is always held securely. The bolster protects the fingers, while the balance allows for flexibility and facilitates precise work. The slim shape of the blade reduces its weight and allows for more efficient work.

Cutting Surface

It is recommended to perform cuts on wooden or plastic cutting surfaces. Glass, stone, and marble cutting surfaces are unsuitable as they may cause permanent damage to the knife blades.

Cleaning

Wash the knife with warm water before using it for the first time. After each use, make sure to wash the knife immediately (with a mild detergent) and dry it with a soft cloth. Especially if you have cut acidic foods, you should wash the knife immediately after use.

For your own safety, you should always wipe the knife away from your body and away from its edge, using a cloth or towel.

It is not recommended to wash it in the dishwasher but by hand, in order to protect its material and maintain its sharpness for a long time.

Sharpening

No matter how sharp a knife is at the beginning, after some use it needs sharpening, something that you can achieve with a sharpener, sharpening stone or strop.

You can tell if your knife cuts well with an easy test using the knife and a sheet of paper. A sharp knife can easily and cleanly cut through a sheet of paper. On the other hand, a knife that needs sharpening will struggle and its cutting will be rough.

Also, it is advisable to sharpen your knives with a professional occasionally, to fix possible damage to the edge of the blade and to maintain sharpness.

    I have been cooking as a hobby for the past few years. I used cheap knives mainly to learn how to sharpen properly without damaging the knife. I bought the crafter with the 16cm blade because it is the ideal size for me. I control it better as an extension of my hand. It is lightweight and the handle allows for a good grip. It is beautiful, reminiscent of our grandparents' knives, and I foresee having it until my old age. It cuts like a razor, so it requires caution for someone who is not familiar. For household and amateur use, it is perfect and even more. I tried it on vegetables and meat. I felt like I leveled up.
