Organic, unpasteurized whole soybean puree (Miso). Hatcho Miso is based on an old traditional recipe of 400 years and enhances the flavor of dishes. Rich in nutrients, with 80% more proteins and 25% less salt than barley or rice Miso.
It matures in traditional cedar wood barrels for 3 years.
