Description

Chopping Knife

The slicing knife is ideal for cutting large pieces of meat, such as roasts or deli meats, into thin slices. Its thin blade, combined with its low height, provides better precision in cutting, while its length ensures that you can easily and accurately cut even large slices with just one motion.

Blade Material

The blade of Tojiro's Flash is made of damascus stainless steel, renowned for its sharpness and durability throughout the centuries, as well as for the impressive "water" patterns it creates, making each knife truly unique. 

More specifically, the core of the blade is made of the innovative Japanese VG10 stainless steel alloy, known for its hardness due to the cobalt it contains, which is surrounded by separate layers of damascus steel, thus enhancing the hardness and durability of the knife.

Each knife in the series is hand-sharpened by skilled Japanese craftsmen on both sides at 15°, in order to deliver an exceptionally sharp knife.

Its hardness level is 58 (±1) HRC (a knife with a hardness above 56 HRC is considered good).

Ergonomic handle made of Micarta

The handle gives it a comfortable feel thanks to its wavy ergonomic design. It is made of Micarta, a construction material - alloy that is particularly hard and resistant to continuous and hard use.

The layers of stainless steel that are placed inside its unique wavy handle provide even more durability and better texture when in contact with your hand.

The weight is properly distributed, giving the knife good balance, offering the most effective usability and directing it exactly as you want when using the knife.

Cutting Surface

Cuts are recommended to be made on wooden or plastic cutting surfaces. Glass, stone, and marble cutting surfaces are unsuitable as they can cause permanent damage to the knife blades.

Cleaning

Wash the knife with warm water before using it for the first time. After each use, make sure to wash the knife immediately (with a mild detergent) and dry it with a soft cloth. Especially if you have cut acidic foods, you should wash the knife immediately after use.

For your own safety, you should always wipe the knife away from your body and away from its edge, using a cloth or towel.

It is not recommended to wash it in the dishwasher but by hand, in order to protect its material and maintain its sharpness for a long time.

Sharpening

No matter how sharp a knife is at first, it needs sharpening after some use, something you can achieve with a sharpener, sharpening stone, or strop.

You can tell if your knife cuts well with an easy test using the knife and a piece of paper. A sharp knife can easily and cleanly cut through a piece of paper. On the other hand, a knife that needs sharpening will struggle and its cutting will be dull.

It is also advisable to sharpen your knives with a professional occasionally, to repair possible damage to the blade's edge and to maintain sharpness.

    Very comfortable, quite sharp, and I believe it is a knife that withstands the test of time. I used it for one season and I am sure I will use it for many more. However, whoever gets it should also be capable of appreciating and taking care of it accordingly.
