Direct and Indirect Grilling
With the Weber Master Touch grill, in addition to the classic direct grilling with the charcoal directly under the food, you can also grill indirectly. Excellent construction... cooking on another level... besides producing less smoke, it cooks the meat without drying it out, giving it a light smoky flavor... the same goes for fish... the built-in thermometer is good... but it also needs a thermometer for cooking... it is relatively easy to clean, but it requires care... and because the result matters, I highly recommend it...
I expected a much better design from Weber for the lid and hinge. The hinge definitely helps to keep the lid open without needing to hold or prop it up somewhere, but it doesn't fit properly. If you place the lid directly on top, it sits well. If you put it on the hinge, it looks crooked because the hinge is not designed correctly. There are videos on YouTube showing how to adjust it to your liking, but it requires a lot of effort and still doesn't give perfect results. Also, when smoking and having a water container for moisture inside, all the moisture that collects on the lid condenses and drips around the grill, again due to poor lid application.
Edit:
Changing from 3 stars to 4. If the water container is placed on the lower grate, then it doesn't evaporate and drip around. If it is placed above the charcoal in the pan that manages the smoke, then it evaporates very quickly and creates the problem I mentioned. Ideally, this should not happen in any case, hence the 4/5 stars. Otherwise, it holds temperature very well, even with a 2:1 snake method, allowing you to smoke for 10 hours EASILY without adding more charcoal.
