Under the title "The Bread and the Salt", two words taken from a verse by Kostas Karyotakis, some rural essays by the author are collected, which have been published at various times and are scattered in the daily and periodical, scientific and common press. The essays are divided into four categories: historical, in memoriam, book reviews, and cultural, where the role of the agronomist in rural economy and development as well as education stands out.
The essays in this collection are usually published as they appeared for the first time in printed form. However, the author added "notes" at the end of each essay to provide initial reactions, but also to supplement or explain certain points more freely.
