Make savory pumpkin cookies
Delicious & nutritious for all summer hours!
Ingredients (12 cookies, 40-50g each)
- 120-150g ground oat flakes
- 220g grated and drained zucchini (2 medium zucchinis)
- 1 red bell pepper
- 1 egg
- 150g white cheese e.g. feta 12% (or 100g feta and 50g anthotyro)
- 4-5 fresh mint leaves (or 1 tsp dried)
- 4-5 fresh basil leaves (or 1 tsp dried)
- Salt, pepper
- 1 tbsp extra virgin olive oil
Execution
- Rub 2 medium zucchinis, salt them and drain them well. Keep them in a colander to remove as much water as possible.
- In a food processor, blend the pepper, basil, and mint.
- In a bowl, crumble the cheese with our hands.
- In a large bowl, mix the grated zucchini, pepper, and feta cheese.
- Add the egg and mix.
- Gradually add the ground oats until a thick batter is formed.
- Place the mixture in the refrigerator for 10-15 minutes to firm up.
- In a large rectangular baking dish, place parchment paper and brush it with 1 tablespoon of oil.
- Shape 12 equal-sized cookies.
- Bake in the oven at 180°C for 40-45 minutes.
